*Gnocchi, gnocchi!* — "Who's there?" — “Cauliflower gnocchi in the frozen aisle at @traderjoes.” I sautéed these last night, in @kerrygoldusa butter and sage. 🤩
Some @Costco goodies today. I’ve been using @Instacart, and I feel like I’m living in the future of my dreams. #dreambig
#
But today, I loaded up baby (and after waiting 30 minutes in the car in the parking lot for her to finish napping), I shopped with my own two feet and two hands. Swipe for goodies that were new to me.
Seared and broiled salmon. It’s warm in northern CA today. I didn’t want to turn the oven on for very long. So, I seared the skin side down in a cast iron for a few minutes, then tossed it in the oven set to broil for 4-5 minutes.

In other ☀️ related news: 1) I wore a skirt for the first time in 2018, 2) I then wore said skirt to the playground with the kiddo. When I sat in the sand with her, the sand went up my skirt. I realized this was not a good playground outfit choice, 3) I applied SPF to my legs, which also attracted said sand to legs.
#
I don’t like sand.
Let’s not talk about the beach.
All the things in a bowl. Because it’s not all that warm outside, this warm-ish salad is a delight. Roasted broccoli, brussels, bell pepper, carrots, asparagus, smashed potatoes and chicken thighs over greens.

Keeping it colorful tonight // sweet potato-y meatballs with spiralized carrots (from @traderjoes — I’ve never spiralized anything. ever. ) drizzled with a teriyaki sauce. Adding the sweet potato to the meatballs changes the texture to be a bit more soft, and less meaty. Which, is saying a lot for a MEATball.
The meatballs: 1 lb ground beef, 1 cup mashed sweet potato (I just microwaved it), 1/2 onion diced, 1 egg, 1/4 cup almond flour, garlic powder, 21 seasoning salute (a la TJs, but a similar spice blend will do) and S&P for 400 degrees for 25 minutes.
Theres a million ways to make a teriyaki sauce, here how I did it tonight: 1/2 cup of coconut aminos, 1 tsp sesame oil, 1 heaping tbsp honey, 1/4 tsp ginger powder, 1 tsp garlic powder. Whisk, and cook over medium, until its thick and saucy.
Another Sunday, another spin class. It’s nice to start a new week with time carved out for myself, especially since becoming a mama — yaknowwhatimean?

About this bowl: GF oats cooked in almond milk and a whisked egg, topped with TJs whole-fat yogurt, flaxseed meal, chia seeds, raspberries, blueberries, chopped pecans and pumpkin seeds, and cinnamon. #carbsfordabooty
Crackin’ Saturday night, gang. Roasting veggies, listening to county music, trying to keep the baby from eating the dog’s food. 🤣 I cooked up some veggies (and liver pate). The veggies will last 2-3 days. I’ll toss these into breakfast bowls, lunch salads, and dinner. It’s the best way I know how to eat MORE VEGGIES. Pictured: roasted sweet potatoes cut in half and coated in avocado oil, S&P; bell peppers in avocado oil; broccoli in EVOO, cumin, S&P; butternut squash in avocado oil, cinnamon and salt; brussels in EVOO and garlic, and lastly liver pate for the baby (@megan___garcia has the best recipe using liver, green apples and spices — baby gobbles it down).
Bowls bowls bowls 🎵 The day before grocery shopping looks like ☝️. I covered this with @traderjoes Almond Butter Turmeric Salad Dressing, and called it a day. 👊
Breakfast happened at 11AM today. 🤷🏼‍♀️ after spin class, a trip to 🎯, and a few errands, I was starving and highly caffeinated (thanks, cup of coffee #2). #
I made this in 10 minutes in two pans: diced turkey kielbasa and fried eggs in @fourthandheart ghee in one pan, and frozen cauliflower medley and carrot medley (both frozen items from @traderjoes 🙌🏻) in another pan. Baby woke up from her nap as soon as I plated it. Eating while nursing is standard M.O., plus she has the opportunity to enjoy the crumbs. 😋
